Ingredients (for 4 servings):
2 tablespoons olive oil
½ teaspoon minced garlic
2 cups medium shrimp, shelled and deveined without
1 teaspoon salt
½ teaspoon pepper
2 tablespoons chopped basil
BasilMayonnaise:
1 cup low-fat mayonnaise
4 tablespoons basil
Ground black pepper 3
½ lemon, juice
Garnish:
2 avocados large ripe sliced
1 lemon, quartered
4 lettuce leaves endive
8 sherry tomatoes choppedin half
Hot sauce to taste
Preparation:
In a hot skillet add olive oil, add garlic, shrimp, salt, pepper and basil. Cook 1 minutes Turn off heat and let the shrimp for another minute. Pass the shrimpto a bowl of ice water is, let alone within the time required to cool.
In a bowl mix all the ingredients of basil mayonnaise.
Cut the avocados into slices and accompanied by shrimp. Serve on aplatter decorated with lettuce leaves, tomatoes, sherry, lemon and if you want to add some h ot sauce.
